These were soaked overnight in brine to pull liquid out of the vegetables so they will be preserved by pickling.

Clint loves giardiniera which is an Italian dish of pickled vegetables. These are eaten as a side dish or chopped small and used as a relish. They can be made spicy too. I recently made him enough to last him a couple of years. I love how all of the colors look on the shelves with the other canning jars.
Pickling is another great way to preserve food.
